A recipe from the region: Asparagus season with Quellmed

During asparagus season, we at Quellmed can't be without a delicious recipe. Inspired by the freshness and quality of asparagus from our homeland, we've created a simple yet delicious dish that's perfect for spring. The best part? It's quick to prepare and combines the freshness of asparagus with a sophisticated twist.


Recipe: Asparagus with lemon and herb sauce

Ingredients:

500g fresh asparagus (white or green)

2 tbsp olive oil

1 lemon (peel and juice)

1 tsp mustard

1 tsp agave syrup or maple syrup

2 tablespoons fresh herbs (such as parsley, basil or chives)

Salt and pepper to taste

1 tbsp roasted pine nuts (optional)

Preparation:

1. Peel the asparagus (for green asparagus, just trim the ends) and cook in boiling salted water for about 5-8 minutes, depending on the thickness of the asparagus. Then drain and rinse.

2. Heat olive oil in a small pan and mix the lemon juice, lemon zest, mustard, and agave syrup. Heat the sauce gently and season with salt and pepper.

3. Arrange the asparagus on plates, pour the lemon and herb sauce over it and garnish with fresh herbs and, optionally, toasted pine nuts.

4. Enjoy – the perfect dish to enjoy spring to the fullest!
